Delightful vegan lemon bars that combine a buttery crust with a tangy lemon filling, perfect for any occasion.
Ingredients
- 1/2 cup vegan butter, melted
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup lemon juice (from about 4 large lemons)
- Optional: 2 teaspoons lemon zest
- 1 1/2 cups granulated sugar (for the filling)
- 1 1/4 cups full-fat coconut milk
- 6 tablespoons cornstarch
- Tiny pinch of turmeric (optional)
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare an 8×8 inch pan by lining it with parchment paper.
- Make the crust by mixing melted vegan butter, granulated sugar, and salt in a medium bowl. Add all-purpose flour and stir until a thick dough forms.
- Press the dough firmly into the bottom of the prepared pan.
- Bake the crust for 16-18 minutes until lightly browned. Let cool slightly.
- Prepare the filling by combining lemon juice, zest, sugar, coconut milk, and cornstarch in a saucepan. Whisk until smooth.
- Cook the filling over medium heat, stirring constantly until it thickens and sugar dissolves.
- Pour the lemon filling over the cooled crust and smooth out with a spatula.
- Bake for an additional 15 minutes.
- Cool the bars at room temperature for 30 minutes, then refrigerate for 1-2 hours.
- Cut into 16 squares, dust with powdered sugar, and serve.
Notes
Store leftovers in a covered container in the refrigerator for up to a week or freeze for longer storage.
