Description

A delightful blend of ripe strawberries and floral lavender notes creates a unique jam that’s perfect for breakfast or snacks.

Ingredients

  • 2 cups fresh strawberries, hulled and mashed
  • 1/4 cup honey or maple syrup
  • 1 tablespoon dried lavender flowers
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your ingredients: Start by hulling and mashing the fresh strawberries in a bowl.
  2. Combine in a saucepan: In a medium-sized saucepan, combine the mashed strawberries, honey or maple syrup, and dried lavender flowers.
  3. Cook the mixture: Place the saucepan over medium heat and cook for about 5 minutes, stirring occasionally.
  4. Add chia seeds and lemon juice: Remove from heat and stir in the chia seeds and lemon juice.
  5. Let it sit: Allow the mixture to thicken for about 10 minutes as the chia seeds absorb liquid.
  6. Store the jam: Transfer to a clean jar, seal tightly, and refrigerate for 2-3 weeks.

Notes

For longer storage, consider canning the jam. Utilize ripe strawberries for the best flavor.
