Delicious Homemade Potato Skins

Description

Crispy potato skins filled with cheddar cheese and bacon, topped with sour cream and green onions. A perfect appetizer for any gathering.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon
  • 1/2 cup sour cream
  • 2 tablespoons chopped green onions
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes.
  3. Poke holes in them with a fork.
  4. Rub the potatoes with olive oil and sprinkle with salt.
  5. Bake for about 45 minutes or until tender.
  6. Let cool slightly, then cut the potatoes in half and scoop out some of the flesh.
  7. Brush the insides with olive oil and sprinkle with salt.
  8. Place them back in the oven and bake for another 10-15 minutes until crispy.
  9. Remove from the oven, fill each skin with shredded cheddar cheese and crumbled bacon.
  10. Return to the oven until the cheese is melted.

Notes

Serve with sour cream, hot sauce, or salsa for dipping. Great for customizing with different toppings.
