Description
Crispy potato skins filled with cheddar cheese and bacon, topped with sour cream and green onions. A perfect appetizer for any gathering.
Ingredients
- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon
- 1/2 cup sour cream
- 2 tablespoons chopped green onions
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes.
- Poke holes in them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake for about 45 minutes or until tender.
- Let cool slightly, then cut the potatoes in half and scoop out some of the flesh.
- Brush the insides with olive oil and sprinkle with salt.
- Place them back in the oven and bake for another 10-15 minutes until crispy.
- Remove from the oven, fill each skin with shredded cheddar cheese and crumbled bacon.
- Return to the oven until the cheese is melted.
Notes
Serve with sour cream, hot sauce, or salsa for dipping. Great for customizing with different toppings.
