Description

A delightful twist on cinnamon rolls and French toast, this casserole is perfect for brunch or special occasions.


Ingredients

  • 6 slices gluten-free bread
  • 4 large eggs
  • 1 cup almond milk
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup cinnamon roll icing (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Mix together the eggs, almond milk, maple syrup, vanilla extract, ground cinnamon, and salt in a bowl.
  3. Prepare the gluten-free bread by tearing it into small pieces and placing it in the greased dish.
  4. Combine the egg mixture with the bread, pressing down to soak each piece.
  5. Rest for 10-15 minutes to allow absorption.
  6. Bake in the preheated oven for 30-35 minutes until golden brown.
  7. Serve drizzled with cinnamon roll icing, if desired.

Notes
