Description

A quick and nutritious dish combining creamy avocado and crunchy toast, perfect for any meal.

Ingredients

  • 2 large ripe avocados
  • 4 slices good-quality rustic bread (sourdough or country loaf), about 1/2–3/4 inch thick
  • 1 tablespoon fresh lemon juice (about 1/2 lemon)
  • 1–2 tablespoons extra-virgin olive oil, plus more for brushing bread
  • 1/4 teaspoon fine sea salt, plus more to taste
  • 1/8 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons finely chopped fresh chives or flat-leaf parsley
  • 4–6 cherry tomatoes, halved or sliced (optional garnish)
  • 1 small radish, very thinly sliced (optional garnish)
  • 2 tablespoons crumbled feta or goat cheese (optional)
  • 2 large eggs (optional, for topping: poached, fried, or soft-boiled)
  • 1 teaspoon butter or oil for cooking eggs (if using)
  • Flaky sea salt, for finishing

Instructions

  1. Prepare and halve the avocados by washing them, cutting in half, removing the pits, and scooping the flesh into a bowl.
  2. Toast the bread until golden and crisp after brushing lightly with olive oil.
  3. Mash the avocado in a bowl until mostly smooth, and stir in lemon juice, olive oil, salt, and pepper.
  4. Cook eggs to your liking, seasoning lightly with salt and pepper.
  5. Drizzle each slice of warm toast with olive oil for added flavor.
  6. Spread the mashed avocado generously across each slice of toast.
  7. Add garnishes such as cherry tomatoes, radish slices, and cheese if desired.
  8. Final plated composition and serve: Arrange your avocado toasts on a plate and enjoy immediately.

Notes

Use ripe avocados for the best flavor and texture. You can customize toppings as desired.
